Cupcakes

Last night I experimented and made apple butter cupcakes with cinnamon vanilla buttercream for today’s pizza party at work.

I like trying to make new varieties of baked goods, but since I’ve been on a diet for all of 2012 I haven’t gotten to do much baking for the fear of tempting myself.

We had a successful review at work so we’re getting pizza (still haven’t decided if I’ll even attend due to temptation) and I figured if I was baking with the intention of bringing it somewhere it would be fine

The cupcakes smell delicious and the frosting turned out great but my oven is causing me problems.

I bought a new oven in October 2011. I love it but recently I’ve noticed that though it beeps when it reaches the desired preheat temp, it continues heating up past that temperature. Thus, my cupcakes (and other things I’ve baked recently) are not cooked evenly and they are a little hard on top. I debated not bringing them in due to embarrassment but decided that if they didn’t like them then they didn’t have to eat them.

I explained the oven situation to 2 of my coworkers and they said that people can deal with a hard cupcake. One even took a cupcake, nuked it for 10 seconds and said it softened right up AND was amazing. That made me feel better.

But, I still want my oven to work properly. Need to call Frigidaire later, since its been a few weeks that I’ve been meaning to.
